How we know

Every dish on this site was read from a page we fetched — never from memory or a guess. Here is the standard, and where it stops.

The standard

• A dish is recorded only from a page that was fetched. Where no source was recorded, the card says so rather than leaving it blank.
• Aggregator and "best of" list sites are excluded — as a class, not down-weighted. A catalogue built from a competitor's list can never be better than it.
• A person decides closures. Automation can flag a place as probably closed; only a human moves it to the archive.
• The receipt on each card is a link, not a quote — so you can follow it and see what we saw, and it tells you what kind of page said it: the filmed segment, the venue's own page, or a news write-up.

The ones that didn't make it

We track closures and archive rather than delete — a closed restaurant keeps its record, with the date and note where we have them. At least one in five restaurants featured on these shows is already gone. That is a fact about restaurants, and it is the whole reason freshness is worth checking.

Where it stops

• A quiet row is not a verified row. No news of a closure is not proof a place is open.
• Coverage is uneven by state, because our own checks are — a state we have swept less will look healthier than it is.
